Well there's the whole "The cutting represents the castration of genitals" parallels that even the characters actually comment on. And whole justification of the cutting being that if they cut the daemon the child won't grow up with feelings of lust or homosexuality.

And all the theories that a person whose Daemon has the same gender as they do it gay.

..that and it's taboo to touch another person's privates. :o
